Responsibilities : 

The Director of Fine Dining is responsible for the following:

*In conjunction with the Vice President of Food & Beverage, the Director of Fine Dining is primarily responsible for the financial performance of 9 Fine Dining restaurants at Wynn & Encore.
*The Director of Fine Dining will oversee a team of General Managers, ensuring accurate revenue management, forecasting, cost controls & operational efficiencies are in effect.
*The Director of Fine Dining will oversee the recruitment, training & development of restaurant managers & their growth as leaders. This will include the maintenance & elevation of Wynn Las Vegas Service Standards in conjunction with Forbes 4-Star & above expectations, along with the development of culinary & beverage knowledge & education.
*The Director of Fine Dining will also be responsible for associated areas in Food & Beverage, including Casual & Contemporary Restaurants, Bars, Lounges & Special Events.

Job Requirements:

*Requires previous experience in elevated service environments & be comfortable with VIP Service standards & expectations.
*Requires Introductory Level Wine Certification or equivalent knowledge.
*Requires a minimum of three years Food & Beverage experience in a management role with financial responsibilities.
*Requires advanced proficiency with MS Office & related Food & Beverage systems.
*Candidate must be able to obtain & maintain any licensing or active work cards, at present or in the future for this position at all times.
*Candidate must be 21 years or older.
